There are two main species of crickets grown in North America, of these we grow the Acheta Domesticus, which is largely considered to be the better tasting cricket. We grow and process our crickets in small craft batches and give them only premium feed. This is important as the taste of crickets is heavily influenced by what they eat.
After harvest our chefs use only the finest spices to flavour to perfection.
